This organic water process decaf has been a very nice coffee to drink, with simple, crowd-pleasing flavors, bittersweet and malty, and capable of some brightness if roasted light. The dry fragrance had notes of light brown sugar, bran muffin, and mild chocolate. The wet aroma showed aspects of baked goods, pecan sticky bun, caramel blondie bar, with a hint of raisin. It brews a very clean decaf cup, and I think a slightly darker roast is where it becomes pretty difficult to peg as being decaf at all. The sweetness has malt syrup, light molasses bread, a hint of brown sugar and cinnamon. There is a note of “matcha tea” which brought earthy brightness, and a structured feel to the cup. Darker roasts are more chocolate-toned, with accents of malted beer grains, and chocolate almond. This Chiapas decaf is delicious brewed, but body is a little too thin for espresso, in my opinion.
